Summer Food

July 4th means the real start to summer in Seattle. All of a sudden we have warm days and lots of sunshine.

Time to eat.

Nothing easier than pasta and pesto. I mixed the hot pasta with several big handfuls of raw baby spinach to bulk up on the veggies. Raw zucchini and diced heirloom tomato on top, with a sprinkling of Parmesan. I love raw zucchini! In salads and as an added crunchy garnish on just about any vegetable dish.

Easy doesn’t mean it isn’t delicious. And gives enough time to enjoy the evening on the deck.
