Mini frittatas are so cute! And so super easy. All you need is a muffin tin and eggs.
I had leftover asparagus, goat cheese, and bacon from a meal earlier in the week. Chopped up small, covered in beaten egg, and baked in a 375 degree oven for about 15 minutes, and then we had a perfect meal.
Served with leftover potatoes, English muffins with butter and jam, a strip of bacon each, and grapefruit juice, coffee, and sparkling water.
Another homemade breakfast, this one a bit easier to prepare than the eggs benedict.
