It’s no secret we love quinoa in this house.
Love love it.
We eat tons of it. We use it instead of rice.
We put it in tacos.
You can put just about anything in tacos, you know.
I opted to eat my quinoa medley plain.
So good, filling, and super healthy.
What you need:
- 1 cup uncooked quinoa
- 2 cups vegetable broth
- 1 can black beans, drained
- 1 can corn, drained
- 1/2 a jalapeno pepper, or more depending on how spicy you like things
- 1/2 an onion
- cumin seed
- salt and pepper
- cilantro for garnish
Bring quinoa and vegetable broth to a boil, then simmer for about 15 minutes.
Dice onion and cook with cumin in a small bit of olive oil until slightly browned. Add salt, pepper, and finely diced jalapeno to onion mix.
Add drained corn and black beans to quinoa mix, continuing to cook on low.
Add onion, jalapeno, spice mix to quinoa mix.
Add more salt and pepper as necessary.
Eat warm! Put in a taco! Put in the fridge and eat cold!
