Lentil, Black Bean and Kale Salad

I made a dish.

A real dish of a dish.

I suppose you could call it a salad. If you chill it. Salads are always chilled, right?

You can chill this if you want. Chill it right the heck out.

This salad is super healthy. It has raw kale in it. Raw kale kind of tastes like broccoli. You have to cut it up small so you’re not chewing on a giant chewy leaf looking like a cow with cud.

Ew. Cow cud isn’t very appetizing.

But this salad is.

I ate it for dinner.

Here’s what you need:

  • 1/2 cup green lentils
  • 1 can black beans, drained and rinsed
  • 2 big handfuls of green kale, stems removed and chopped into bite size pieces (see cow cud warning above)
  • 1 Tablespoon olive oil
  • 3 Tablespoons balsamic vinegar
  • salt and pepper
  • roughly chopped walnuts for topping

Cook your lentils. I simmered mine in 2 cups of water for about 30 minutes.

Strain any extra water from your lentils.

Add black beans.

Add kale. Kale will wilt and brighten a bit from the heat of the lentils.

Add olive oil, vinegar, salt and pepper.

Stir together.

Eat warm, lukewarm, room temperature, or shove it in the fridge and eat it cold. Do what you want to do. Be who you want to be.

Top with chopped walnuts when you’re ready to eat.
